Meat!
With spring’s chilly arrival, I know it’s only a matter of weeks before I won’t want to cook or eat another slow-cooked, hearty meal. So I’m taking these last few chilly weeks to build winter comfort food meals into our menus. Which is the long way of introducing the brisket we ate for dinner the other night.
Louisa arrived in the kitchen overjoyed to find a huge supply of Meat! for dinner, and the even better news was that Joe was eating at a business dinner and wouldn’t be joining us. So there was even more Meat! to go around.
In fact, there was so much Meat! that she has taken brisket sandwiches for lunch for the past two days.
Sadly, tomorrow is another Lenten meatless Friday. This is what Catholic sacrifice is all about.
