My Five-Pound Birthday
Since my birthday celebrations began two weekends ago, I’ve been very well fed. There was the delicious weekend at my sister-in-laws house complete with triple-layer chocolate cake. On Wednesday I was taken to lunch by a friend to a favorite Italian spot we often visit. That was followed by the Mexican dinner, where I celebrated with my mom and dad. And yesterday, on the actual day, I was treated to lunch and dinner.
First I was treated to lunch at a Thai restaurant. My favorite part of the meal was the appetizer corn and shrimp cake which you see in the photo above. I chose the classic Pad Thai noodles with chicken for my main dish.
Dinner out was with the family. We went to a local Italian restaurant that has always received top marks, but we had never tried before. We shared an appetizer of fried, zucchini blossoms stuffed with 4-cheeses and accompanied by a cherry tomato coulis. I attempted to fry zucchini blossoms last summer without much luck, so I find it a treat when someone does it right. The tomato coulis had seductively sweet undertones, the cheese was a savory blend, and the batter was perfectly fried. My main course was an herb crusted rack of lamb that came accompanied by escarole and white beans, and roasted potatoes. The lamb was tender, seasoned beautifully and cooked to my taste.
When dining out, I often enjoy ordering dishes that I don’t cook at home, explaining my choice of this meat-heavy entree.
I still have one more birthday lunch to go. I would be terribly surprised if I don’t pack on 5 pounds before this is all over. But those five pounds will have been well worth it.
