So we went from tofu yesterday, to beef stew today. And how do we swing between these extremes? It has to do with being a happy omnivore, and a bit of advance planning. The planning part has everything to do with thinking about my weekly schedule and when and how much time I’d have to cook. Since I’m volunteering at Louisa’s school this week, my time for cooking is short. I needed a quick and speedy dinner yesterday – hence the tofu. On the other hand, today, I had just as little time to cook, but it was squeezed between coming home from my volunteer work, and going back out to Annie’s concert at school. Therefore, I needed to plan a dinner that could be prepared within the slim hour and a half I had to catch up on everything, including prep dinner. An extra requirement was that I needed to leave dinner cooking unattended while we were out, so that it would be ready upon our return at 8:00 – 8:30. With a little help from Louisa, we prepped everything in the casserole and tossed it in the oven before we ran out for the evening.

Since I’m a happy omnivore, I was equally pleased with both night’s dinners. But for the rest of them, my darling carnivores wish I would make more meals like this evening’s.

    I think omnivores have more fun and I too am an omnivore.
