Just Can't Find that Loving Feeling
With our CSA membership this summer, I’ve had plenty of opportunities to learn to love beets. I really, really wanted to love them. I’ve tried so hard to make a relationship with them work. But no matter how hard I try, I can just barely conjure up a mild tolerance for them. The chiogga, heirloom variety has been less repulsive than the regular beets. But as you can tell, they won’t be making my top 10 list anytime soon. Sorry you beet lovers out there.

Why don’t you shread your beets and mixed them into a muffin. Maybe you’ll discover something healthy and tasty. Maybe not.
Would you mind trying it first and letting me know your results? Carrot muffins, zucchini muffins, banana muffins all good. Beet muffins, not so sure.
