Quote of the Week – 9/30/09

“To become a cook you only need a few essentials: appetite, ingredients, a kitchen to work in, a few tools, and a few ideas about what to cook. But which comes first? Appetite, perhaps: the one thing that all the people I know who love to cook have in common is that they love to eat-and the desire to eat good food is what motivated them to become good cooks.” – Alice Waters in “The Art of Simple Food”

To become a good cook you need love. You either love the food or the people for whom you are cooking.

But when I sold my first chocolate truffles in the early 1970s, take-out food was pizza or Americanized Chinese food or, in some cities, Jewish or Italian food from a delicatessen. Coffee had the strength of dishwater and cheese was always orange. — Alice Medrich, Bittersweet
