		<description>I love alfalfa sprouts too, but if it&#039;s only the crunch you will be missing, there&#039;s a great substitute.  Try very, very, very thinly sliced cucumbers for a nice cool crunch.  Other crunchies could be thin carrots, celery cut lengthwise,and thinly sliced fennel which adds a very different flavor.  Also, think apple.  Its cool, crunchy and adds an interesting taste to simple sandwiches like ham and cheese.  And, you can always buy organic seeds and sprout them yourself!</description>
