Here’s a Riddle – Can You Guess What Day It Is?

Can you solve this picture riddle?
Can you guess from this picture what today is? Here are a few hints to get you started.
The vegetables you see are sweet potatoes, turnips, white potatoes, carrots, and parsnips. These are all great vegetables that grow under the ground. They store well in a cool, dry location, and last for many weeks. In fact, once upon a time they were the only vegetables you could get during the long winter months. In these tough economic times, they provide good value for your dollar.
Cook up an assortment of these vegetables and you have a dietary powerhouse. Non-fat (unless you add it in the preparation), most are high in fiber, and contain a variety of vitamins covering the alphabet. Not only are they good for us, but they go a long way to fill our appetites.
Traditionally these vegetables have been boiled and mashed with butter, salt and cream. In recent years many chefs, myself included, have discovered how sweet they become upon roasting. Chopped up and roasted with a bit of olive oil and a sprinkling of salt, these vegetables have been updated for a new generation.

BTW it is actually “Square Root Day” not “Square Roots Day” but then again it is your blog.
